Chocolate-Covered Strawberry Cheesecake

The ultimate in Valentine's desserts, you can't pass up this subtly-sweet, chocolatey cheesecake.

Ingredients for the Crust

  • 1 Box Pillsbury Brownie Mix
  • 2/3 cup oil
  • 1/4 cup water
  • 2 eggs
  • 1 can strawberry pie filling

The make the Crust

Make the brownie mix according to the instructions. Spray one 12″ springform pan with nonstick spray. Pour 2 cups brownie mix into the pan and bake for 20 minutes. Bake the remaining brownie batter in an 8 x 8 pan. Let the crust cool, and then spread 1 can of strawberry pie filling on top of the brownie crust.

Ingredients for the Filling

  • 4-1/2 – 8 oz. cream cheese
  • 1-1/4 cups sugar
  • 1/2 cup melted chocolate chips
  • 4 eggs + 1 egg yolk
  • 3/4 cup sour cream

To make the Filling

In a mixer, beat the cream cheese and sugar on high until smooth. Add in sour cream and mix well. Turn the mixer on the lowest speed and add the eggs one at a time.

Melt the chocolate chips in microwave or in saucepan. Add the melted chocolate chips into the cream mixture on medium for several minutes until the batter is smooth. Pour the filling on top of the strawberry pie filling in the cheesecake pan. Bake at 350 degrees for one hour. Remove from oven and cool for one hour. Refrigerate overnight, or until the cheesecake is completely chilled and then remove from springform pan.

Ingredients for the Decoration

  • 2 cups chocolate chips
  • 1/4 cup evaporated milk
  • Chocolate icing
  • 10 strawberries

To Decorate

Melt the chocolate chips in microwave or in saucepan. When the chips are completely melted, add in the evaporated milk. The mixture will thicken. Spread on the cheesecake around the top and sides. Pipe chocolate icing around the top and bottom edge. Garnish with fresh strawberries dipped in chocolate.
